The story: Our farmers’ market customers requested a blend for a beef recipe. In response we created Provencale, a natural sequel to our Coq au Vin. The result is a melt in your mouth rich beef stew cooked gently and slowly in red wine with a twist of orange.

Zen Spice Spotlight: Rosemary is a strong, oil rich herb which loves to bathe luxuriously in red wine. Its stimulating Camphorous scent brings a vibrancy to slow cooked beef, and keeps our minds alert so that we can savor the experience.

Occasions: Provencale is an excellent choice for a weekend supper after a day out, left to cook all day. After a bracing winter’s day on a Lake Michigan beach it’s a welcome dinner.

Complete your meal: Serve with a basket of crusty french bread and a simple tomato salad with balsamic dressing.

To drink: A tall glass of orange and club soda or a glass of a California Cabernet or Bordeaux.

Cook time: 3-4 hours on high, 8 hours on low
